Arctic Char
Arctic char has been an important and healthy food resource to Inuit for centuries. Char is eaten raw, frozen, dried, smoked, aged or cooked. Highly nutritious, abundant, cheap and relatively easy to catch, the arctic char is indispensable to the Inuit lifestyle. Since the late 1940's arctic char has been caught commercially and shipped southwards and has become a gourmet restaurant item in many large North American cities.
